Banana Bread

 

This is a super delicious, moist and healthy recipe that contains no refined sugars, and the perfect way to use up your old banana's. 

 

Ingredients

1/4 cup dates, chopped

2 tsp vanilla extract

4 tbsp peanut butter

1/4 cup boiling water

1 cup flour (wholewheat, buckwheat etc)

1 cup almond meal

1/4 cup shredded coconut

1/4 cup walnuts, chopped

1 tsp ground cinnamon

3 ripe banana's

3 eggs

 

Method

1. Pre-heat oven to 180 degrees. Line a loaf tin with baking paper.

2. Mix together dates, vanilla, peanut butter and boiling water.

3. In a large bowl, combine flour, almond meal, coconut, walnuts and cinnamon.

4. Place banana's and eggs in a seperate bowl. Mix well. Add to dry ingredients. Add date mixture and stir to combine.

5. Spoon mixture into loaf tin. Bake for around 30 mins, until golden on top. Cool in tin before turning out.

 

Peak Nutrition Tip

I slice the loaf up and freeze in zip lock bags, ready for toasting and top with peanut butter. You can also switch out the dates for other dried fruits like apricots or cranberries.
