Chicken Meatballs
Ingredients
1kg turkey/chicken mince
3 egg whites
1 cup oats
1/2 tsp. ground cumin
1/2 tsp. dried thyme
2 tsp. dry yellow mustard
Pepper
2 tsp. chilli paste/powder
Salt
2 tbsp. garlic
1 small onion, finely chopped
2 celery stalks, finely chopped
Method
1. Preheat oven to 180 degrees
2. Spray muffin tray lightly with oil
3. Mix all your ingredients together in one large bowl.
4. Roll the mixture into balls and place in muffin tray.
5. Bake for around 25 minutes, until golden brown and cooked.
Makes 12 meatballs
Peak Nutrition Tip:
I put these in the freezer and take two out for lunch with a fresh salad. The kids love these with whole wheat pasta and homemade tomato sauce - also know as spaghetti bolognese!
