Chicken Kebabs with Couscous

Ingredients

Kebabs

400g chicken breast, diced

1 tsp garlic powder

1 tsp ginger powder

1 tsp onion power

1 tsp coriander powder

1 tsp paprika (optional)

1 tsp chili (optional)

1 tsp curry powder

Oil

 

Salad

1 cup Organic Whole Wheat Couscous

1 cup boiling water

Chicken/vegetable stock

1 tbsp oil

1/4 Red Capsicum, chopped

1/4 Green Capsicum, chopped

1/4 Yellow Capsicum, chopped

2 tsbp currants

2 tbsp red onion, finely chopped


Method

Kebabs
1. Skewer chopped chicken.
2. Lightly coat in oil.

3. Mix the remaining ingredients in a bowl.

4. Coat kebabs in mixture and place on grill untl cooked through.

 

Salad

1. Add couscous, oil and stock to boiling water and stand for 2 minutes.

2. Add chopped capsicums and currants and mix.

 

Serve together on a plate

 

Serves 4

 

Peak Nutrition Tip:

Make extra for lunch. Switch the chicken for prawns, beef or pork! Add more vegetables to Couscous for more flavour and colour.
