Carrot Protein Slice
Ingredients
1 cup oat flour
2 scoops vanilla whey protein
2 tsp. cinnamon
1/2 tsp. baking soda
salt
1/4 tsp. allspice
1/4 tsp. nutmeg
4 egg whites
3/4 cup splenda, stevia or 1/4 cup xylitol
230g carrots
120ml water
Method
1. Preheat oven to 180 degrees.
2. Peel and chop carrots and steam until cooked.
3. Puree carrots and leave to cool.
4. Mix flour, whey protein, cinnamon, allspice, nutmeg, baking soda and salt together in a bowl.
5. Add wet ingredients to dry ingredients and mix together.
6. Pour ingredients into a lined, square 16x16 oven proof dish.
7. Bake 15-20 minutes or until golden brown.
Makes 16 slices

I keep these in a air tight container in fridge on standby. These are great as morning or afternoon tea snacks, and if you're feeling pekish, these are a healthy option and they taste amazing!
